Rosemary Freekeh Side Dish

Servings: Serves 4

INGREDIENTS

1 1/4 cup water
1/2 cup Freekeh
1/4 cup Honey-Roasted Pecans
chopped
1/8 cup Apricots, Unsweetened & Organic
chopped
1 tablespoon Macadamia Nut Cooking Oil in Glass Bottle
1 teaspoon rosemary, finely chopped
1/8 teaspoon salt

If you’re in a food rut, or just want to try something new and a little different, then this fragrant and flavorful Rosemary Freekeh side is just what the doctor ordered. Cook up your favorite freekeh (such as NOW Real Food® Organic Freekeh), let it cool, then add in honey-roasted pecans, apricots, macadamia nut oil, rosemary and salt. Super-delish!

DIRECTIONS

  1. Place water and freekeh in a pot and bring to a boil.
  2. Reduce heat to low, cover, and cook 20 to 25 minutes, until water has been completely absorbed.
  3. Cool for an additional 10 to 15 minutes.
  4. Toss cooled freekeh with honey-roasted pecans, apricots, macadamia nut oil, rosemary and salt.
  5. Serve and enjoy!
