Pumpkin Spice Muffins

INGREDIENTS

1 cup pumpkin
½ cup milk
2 eggs
4 drops Monk Fruit Vanilla Liquid, Organic
1 cup Gluten-Free Baking and Pancake Mix
½ cup Dark Brown Sugar, Organic
2 tablespoons Golden Flax Seed Meal, Organic
½ teaspoon salt
½ cup Pecans, Raw & Unsalted
chopped
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon allspice
½ teaspoon ginger

There aren’t many foods more comforting than a warm, soft, pumpkin spice muffin. Our recipe is even more comforting since you don’t have to worry about questionable ingredients. DIRECTIONS

  1. Preheat oven to 350° F and use nonstick spray to grease muffin tins
  2. In a large bowl, combine pumpkin, milk, egg, and Organic Vanilla Monk Fruit Extract.
  3. In a separate bowl, combine Gluten-Free Baking & Pancake Mix, Organic Brown Sugar, Organic Golden Flax Meal, salt, and spices.
  4. Fold dry ingredients into pumpkin mixture. Mix until uniform batter is formed.
  5. Fold in chopped pecans.
  6. Place batter into prepared tins until full.
  7. Bake for 15 to 20 minutes or until inserted toothpick comes out clean.
  8. Serve and enjoy!!!

*For an extra treat, before baking, top muffins with 1-2 tablespoons of Gluten-Free Red Quinoa Streusel!
